Upcycling food reduces food waste by creating high quality, nutritious products out of the nutrients that slip through the cracks of our food system. And while upcycling is an ancient tradition based on elevating all food to its highest and best use, in recent years it's become a major focus of the food waste movement with attention from businesses, the media, and consumers. So... what next?
